Healthy Apple Bread (gluten free, paleo, with vegan option)

Moist + tender apple bread made with crisp apples, applesauce, + apple pie spice. A healthy dessert or snack that’s gluten free + paleo with a vegan option.

It’s apple season + quarantine continues here in Northern California. So obviously, I’m still over here baking away.

Apples always remind me that Fall is just around the corner. And this cozy apple bread will fill your kitchen with all the Fall smells.

Apple Bread Recipe Deets:

The recipe is simple. Just a few basic ingredients. And what you get is a seriously luscious bread with a moist and tender crumb + a fluffy and moist texture loaded with apple pie spice + chunks of fresh apple.

❤️ gluten free flour mix (almond flour, arrowroot powder/tapioca + coconut flour)

❤️ apple pie spice

❤️ maple syrup

❤️ butter, ghee, or coconut oil (use coconut oil for vegan)

❤️ eggs (use flax eggs for vegan)

❤️ apple sauce

❤️ chopped apple

❤️ plus baking powder, salt, + vanilla

❤️ plus a decadent streusel crumble to take it to the next level

What kind of apples to use?

The best kind of apples to bake with are Honeycrisps, Braeburns, Jonagolds, Pink Ladies, Granny Smiths, Galas, + Golden Delicious.

What if I don’t have all of the flours?

This recipe can be made with 1 and 1/2 cups of plain almond flour. The texture won’t be quite as light and fluffy but it totally works. You can also use 1 and 1/2 cups of paleo flour.

What if I don’t have apple pie spice?

My fav apple pie spice is from Primal Palate. But you can totally make your own:

  • 1 tbsp cinnamon powder
  • 3/4 tsp nutmeg powder
  • 1/2 tsp allspice
  • 1/2 tsp cardamom powder

How to make this recipe vegan?

Many of you continue to ask for egg free recipes. You can use 2 flax eggs in place of real eggs. 2 flax eggs = 2 tbsp ground flax meal + 6 tbsp water. Whisk together and let sit for 10 minutes to form a gel.

How to store apple bread?

Apple bread is very moist + needs to be stored in fridge in a sealed container. And yes, apple bread is freezer friendly and can be stored in the freezer. Wrap each slice in parchment paper and place in a reusable silicone bag. It will keep well frozen for up to 3 months.

Description

Moist + tender apple bread made with crisp apples, applesauce, + apple pie spice. A healthy dessert or snack that’s gluten free + paleo with a vegan option.

Ingredients

FOR STRESEL CRUMBLE

  • 1/4 cup almond flour
  • 2 tbsp finely chopped nuts
  • 2 tbsp coconut sugar (like this)
  • 1 tsp apple pie spice (like this)
  • pinch of salt
  • 2 tbsp butter, ghee, or coconut oil

 

FOR APPLE BREAD

  • 1 cup almond flour (I use THIS blanched brand)
  • 1/3 cup arrowroot powder (or tapioca starch) (like this OR like this)
  • 2 tbsp coconut flour (I use THIS brand)
  • 1 tsp baking powder
  • 1 and 1/2 tsp apple pie spice 
  • 1/4 tsp salt
  • 2 eggs (or 2 flax eggs)**
  • 1/4 cup butter, ghee, or coconut oil, melted
  • 1/3 cup maple syrup
  • 1/2 cup applesauce
  • 1 tsp vanilla extract
  • 1 apple, peeled, cored, and chopped

 


Instructions

  1. Preheat oven to 350’F.  Line loaf pan with parchment paper, allowing sides of paper to come up the sides a bit.  Grease any exposed sides. 
  2. To make streusel crumble, combine almond flour, chopped nuts, coconut sugar, apple pie spice, salt, and melted fat in a small bowl until a crumbly mixture forms.  Place into freezer while you prepare the batter. 
  3. To make apple bread, whisk together almond flour, arrowroot powder, coconut flour, baking powder, apple pie spice, and salt.  Set aside.
  4. In another bowl, whisk together eggs, melted fat, maple syrup, applesauce, and vanilla.  Add wet to dry and gently mix.  Fold in chopped apples. 
  5. Scrape mixture into loaf pan and sprinkle cold crumble over the top.  Bake for 50-55 minutes, until toothpick comes out clean in center.  Allow to cool for 5 minutes then using the parchment paper sides, lift out onto cooling rack and allow to cool completely. Slice and enjoy. 

Notes

You can use 2 flax eggs in place of real eggs. 2 flax eggs = 2 tbsp ground flax meal + 6 tbsp water. Whisk together and let sit for 10 minutes to form a gel.

As always, room temperature ingredients work best when baking.

Baking powders traditionally have GMO corn in them. You can find a corn free brand HERE,   I prefer to make my own:  1 part baking soda, 2 parts cream of tartar, and 2 parts arrowroot powder.

mindset mindset mindset 🧠🧠• having a morning routine allows us to set an intention for the day rather then just letting the day run away from us • it helps determine our mind set and the tone for the rest of the day ✨✨

things like meditation, journaling, yoga, exercise, and other self-care practices can help us start the day feeling calm and inspired 🧘🏻 • consciously selecting the thoughts we have, the foods we eat , and the news/social media/images we see matters • a solid morning routine can reduce stress, boost energy, increase mental clarity, and leave us feeling 🤩

creating a morning routine looks different for us all • routine comes easier for some than others • we all have different priorities, time limits, physical needs/abilities, and health concerns there • are no rules • find what works for you 

i know that i feel better when i stick to my morning routine • i know that i feel better when i don’t engage with my phone or social media the first hour or two after waking up • i know i feel better when i consciously select what i bring into my head space first thing in the morning, including the thoughts that i have 

my morning routine currently looks like this:  10 minutes of quiet meditation, some form of elimination pathways opening like Gua Sha, coffee e nema, an epsom salts bath, or a sauna, yoga/workout, and a big green juice 🥬🥒🍏

what’s not to love about a fritter? ❤️ • what’s not to love about a fritter? ❤️ •  made a batch of my BUTTERNUT SQUASH FRITTERS this morning • a great way to get more vegetables onto your plate • so good with a plate of fried eggs and steamed kale • made with just a few simple ingredients • don’t skip the fresh herbs 🍀🌱🍀

* butternut squash (about 3 pounds)- peeled and shredded
* eggs, whisked
* 1/2 cup gluten free flour (I used a combo of almond flour and tapioca) 
* 1/4 cup fresh herbs, finely chopped ( any combo of parsley, basil, sage, or cilantro)
* 1/4–1/2 tsp garlic powder
* 1 tsp salt
* ghee or avocado oil for cooking

1. in a large bowl, combine shredded butternut squash, eggs, flour, herbs, garlic powder, and salt.  mix to combine. 
2. in a large skillet, heat a liberal amount of fat of choice over medium high heat.  scoop out 2 tablespoons of mixture into hand, squeeze into a ball, and place into skillet, flattening with the back of a spatula or measuring cup. cook until golden brown.  flip and cook other side.  repeat until mixture is all gone, adding more fat as needed. 
3. place cooked fritters onto a wire rack while cooking the rest.  serve immediately or freeze for later once cooled.

my self-care routine focuses heavily on detoxification/elimination because i’m in heal mode • my toxic burden bucket 🪣 got too full + it put me over the edge • the liver, kidneys, large intestine, lymphatic system, and sweat glands 💦💦 work hard every day to reduce the build up of environmental contaminants and need regular support to keep functioning optimally • my self-care routine includes:

• infrared sauna for sweating
• Gua Sha to move lymph
• epsom salt baths
• daily movement
• hydration
• cold-pressed juices for nutrition
• coffee enemas
• ozone therapy 
• red light therapy 
• time in nature

don’t wait until you get sick to decide to take care of yourself • you only have this one body and this one precious life • it is NOT normal to feel crappy as we age • let’s change the paradigm and move forward in age with grace + vitality ✨✨• than you, @dr.jess.md for motivating me to take things to the next level
sweet potatoes + instant pot shredded chicken + sa sweet potatoes + instant pot shredded chicken + salsa verde + avocado = my kind of dinner • easy, family-friendly + damn delicious 

🍠🍠 roast whole sweet potatoes at 400’F until soft • to cook salsa verde chicken: place chicken thighs or breasts in Instant Pot and sprinkle with cumin and garlic powder • pour salsa verde on top and cook on HIGH pressure for 15 minutes • quick release and shred • 🥑🥑 mash avocado with lime + salt • put it all together, sprinkle with fresh cilantro 🍀🍀 and enjoy • so many good flavors
