Oh, good! I’m glad to see that I am not the only one. Because I’ve got nothing but winter squash for you today.
I love our local vegetable stand. Part of it lives outdoors, so you can always see what’s new and in season. I drove by there today on my way to take Little One to school and saw a rainbow of new crop winter squash sitting in the morning sun. Fall has arrived.
As much as I adore the hot sunny summer, I’m sort of excited for a change in food. I practically live off of salads and clean protein during the summer. Time to switch it up a bit as the weather gets cooler. So I’m stopping by real quick today to share some of my favorite healthy winter squash recipes.
Why eat winter squash? Well…. first of all cuz it’s absolutely delicious. And hearty and filling. Plus winter squash is loaded with immune boosting and antioxidant nutrients like vitamin A, vitamin C, and magnesium. Winter squash also helps your body fight inflammation with a healthy dose of omega-3 fatty acids. And they are a great alternative to processed carbohydrates like pasta and bread.
I love almost all winter squash. We eat them often during the cold fall and winter months. There are so many ways to cook with them. Here’s some of our family favorites for a bit of inspiration:
