15 Minute Meal: Kale and Sausage

I love kale.  I eat it almost every day.  Really.  I eat it with my eggs in the morning.  I make green soup for lunch.  And it usually shows up on our dinner plates in some form or another.  And when I just don’t feel like cooking, I make Kale and Sausage.

I almost always have a package of sausage in the freezer.  We buy an organic chicken apple sausage.  And kale grows year round in the backyard.  So you could call this my go-to-meal when I’m feeling uninspired or just plain lazy.

There’s really nothing to this.  So simple to prepare.   And it’s delicious, savory, and satisfying.  My favorite addition is some yummy, leftover sweet potatoes.   The sweetness of the yams adds a nice touch.  I love salty and sweet together.

Kale and Sausage

Ingredients

Scale
  • 1 bunch kale, chopped into thin ribbons
  • 3 – 4 sausages ( preferably organic and sustainable) We like chicken apple but any sausage will work
  • 1 TBS coconut aminos (a healthy soy sauce alternative) (like THIS)
  • 1 tsp butter or ghee (like this)


Instructions

  1. Steam kale for 8-10 minutes. Remove from heat and toss with coconut aminos
  2. Meanwhile chop sausage into bite-sized pieces and saute in butter/ghee until thoroughly browned and thoroughly cooked
  3. Remove sausages from heat and add cooked kale
  4. Mix to combine and serve
  5. ENJOY!!

    Where do you get your sausage from? What brand is it? It is hard to find tasty sausage without all the harmful additives.

      We have a source for sustainable sausage from a local farm, but sometimes I buy this chicken apple sausage from Applegate. The ingredients are pretty basic: Organic Chicken, Organic Dried Apples, Sodium Lactate (From Beets). Contains Less Than 2% Of The Following: Sea Salt, Organic Apple Juice Concentrate, Organic Spices, Organic Garlic. Link HERE

    Thanks for the recipe. I just made this tonight. We’ve been eating sausage and couscous and this is a great new non-carb option for us. If I don’t want to use coconut aminos or soy sauce do you recommend something else? Have you done it plain before? Thanks again.

      So glad that you like it. My family does too. You could skip the coconut aminoes and just season with a nice seasoning salt like Herbamare. Thanks for the feedback!

    Can you tell me how many servings this recipe makes? My husband is on a Ketogenic diet and it would help to know servings and even the nutrition data, but I can figure that out.

  • 💪fitness is one of the biggest mood boosters in my life—not because it solves everything, but because it consistently gives me space to come back to myself 💪

💪sometimes the workout is the least important part • the real gift is becoming the kind of woman who keeps choosing herself, over and over again 💪
  • ✨this season has changed me in ways i never expected—and honestly, i think it’s making me a better woman • softer, slower, stronger, and more trusting ✨✨
  • ☀️sunlight sets the tone for my day and for my hormones • i’m 52• moving towards menopause • not doing complicated protocols, hormones or peptides • finding my way through slowing down, getting strong , simplifying, and being intentional with what ACTUALLY supports my body • every woman has a different journey • and i’m figuring out mine 💗
  • 💗 some things are out of our control • AND we have more agency over what happens to us than we think • a beautiful life is built in the habits we repeat 💗

  • 🥦🥒🥬 growing your own food is a powerful way to support your health • you get fresh food + sunshine, fresh air and movement when you work in your garden • you don’t need a HUGE homestead • you can grow in containers on your apartment patio • you can create raised beds in your front yard • you can create an urban garden in the middle of a city 

🥦🥬🥒 we are blessed with a bit of land in western NC (about an acre) • 8 garden beds provide space to grow lots of things • i concentrate on building healthy soil • no pesticides or chemical • we also have berries and fruit trees planted around the yard 

🥦🥒🥬 there’s a deep satisfaction that comes from working the soil, tending the plants, harvesting the vegetables, and eating what we grow • it connects me to SOURCE/GOD 💗 and reminds me to stay in rhythm with NATURE • grateful 🙏
