When it’s hot outside, my favorite thing to do is to sit in the shade on our porch swing eating a cold popsicle. What I really love about it is watching my little one (she’s almost 2) enjoy her freezer pop. She just goes for it, juices dripping down her little chin. Smiling. Laughing. It’s pure JOY!!
Since we ordered these popsicle molds, we been making all sorts of different freezer pops. What I like about them is that they are BPA-free. The possibilities are endless when it comes to ingredients. Leftover smoothies work great.
But this week, we had some leftover homemade coconut milk. So we made these:
They are dairy-free, lightly sweetened with honey or maple syrup, and contain only 3 ingredients. Canned coconut milk would work fine, as well. But I would recommend using a natural coconut milk made without carrageenan (a known carcinogen) gums, additives or preservatives. I used a frozen berry mix and a ripe mango for these pops. Any ripe berry or fruit would be delicious. I hope you enjoy them as much as little Pearl did.

- Yield: 6 large popsicles 1x
Ingredients
Instructions
- Mix coconut and sweetener of choice together until well combined
- Stand popsicle holders upright and fill partially with berries or chopped fruit
- Pour coconut milk mixture over fruit, gently jiggling popsicle holder to get milk to settle in and fill the holder
- Place in freezer until completely frozen (don’t forget to put in the popsicle handles!)
- Enjoy!!

Would pure lime juice work in Popsicles?

You could make a limeade with fresh lime juice, water and some honey. You could also experiment with limeade and coconut milk if you wanted a creamier popsicle. May puree it all together with some other fruit. I bet it would be good. Let me know if you try it. 🙂
