Chia Pudding Popsicles

Ingredients

  • 2 cups milk (I use THIS BPA free full fat coconut milk)
  • 2 tbsp maple syrup or honey (**see note about sweetener)
  • 1/4 cup chia seeds (black OR white)
  • fruit

Instructions

  1. Combine milk and sweetener until creamy smooth. Whisk in chia seeds. Cover and allow to sit in fridge until chia seeds expand – at least 2 hours.
  2. Remove from fridge and spoon in a bit of chia pudding (about a tablespoon) into 5 large popsicle molds. Then layer in a bit of your favorite fruit. Top with more chia pudding and then more fruit. Continue layering until mold is full. Give molds a little tap tap to get the chia pudding to fill in all of the spaces around the fruit.
  3. Freeze until frozen. Enjoy!

Notes

– These popsicles are mildly sweetened. For a totally unsweetened treat, simply leave out sweetener. And if sweet is your thing, feel free to adjust the chia pudding for sweetness once the chia seeds have expanded by adding more sweetener.
-For best flavor, use the freshest, sweetest, most ripe fruit you can find.
