Cashew Pomegranate Bites (gluten-free, dairy-free, paleo)

Last month I posted a Valentine’s Day post with Toasted Coconut Almond Fudge and Almond Delights.  The third treat that I made that day was the Cashew Pomegranate Bites.  I was looking for a natural ingredient to make some sort of PINK treat for Valentines’s Day, and I came across  this pomegranate powder at our local health food store.  It is pink.  It is full of antioxidants, vitamins, and minerals.  So I gave it a try.  The treats didn’t turn out as pink as I had hoped, but they are delicious.  A little sweet.  A little tart.  And a little chewy.  The perfect combination of cashew butter, honey, and pomegranate.  I was expecting the Toasted Coconut Fudge to be the favorite around here, but my family actually likes these cashew treats the best.

I made these with hard candy molds, but you can use mini muffin tins as the mold as well.  The pop right out once you place them in the freezer for a while.

These treats are best right out of the freezer as they get pretty soft at room temperature.   I love yummy treats that are good for you as well.  And if you decide to buy the pomegranate powder, you can use it in smoothies as well to add a little nutrient boost.  I recently saw these freeze dried strawberries at the camping store and thought that they could work as well if you ground them up.  Haven’t tried it yet but definitely worth a try.  And please let me know if you do…… ENJOY!!!

Cashew Pomegranate Bites

Ingredients

  • 1/2 cup cashew butter
  • 1/2 cup coconut oil, melted (like this)
  • 4 TBS honey (like this one)
  • 4 TBS pomegranate powder

Instructions

  1. Melt cashew butter and coconut oil in a double boiler until completely smooth
  2. Stir in honey and mix until well combined
  3. Remove from heat and add pomegranate powder
  4. Pour into candy molds OR mini muffin tins
  5. Place into freezer for at least an hour to set
  6. Remove from molds/tins and store in freezer in airtight container

    Mmm…yes please! These look delicious. I might see if our local health food store carries pomegranate powder. I have never heard of that, but can think of several uses for it. Thanks for sharing!

      You can put it in anything. Great for smoothies. Loaded with anti-oxidants, a little tart, and a little sweet…. thanks for stopping by 🙂

what you’ll need:
cabbage
salt
1/2 gallon wide mouth mason jar (or you can use 2 wide mouth quart sized jars)
air-tight fermentation lid

collard green
green cabbage
purple cabbage 
carrot 
tons of fresh ginger 

👉 and, yes, not everyone tolerates cruciferous vegetables • i didn’t used too • i’ve done a lot of work on my gut + digestion • and i still prefer them cooked as they are easier to digest • eat slowly • give thanks (gratitude has a positive effect on the nervous system) • chew well (so your body can release all the enzymes needed to digest your food) ❤️• it’s so so important to eat in a relaxed environment so the body can rest + digest • eating while in “hurry” mode leads to indigestion and poor absorption
