Know what I love most about sweet potatoes? I NEVER get sick of them. I eat them for breakfast. I eat them for dinner. And I make desserts out them. Next to kale, they are my favorite vegetable. Today I would like to share 20 of my favorite grain free ways to eat sweet potatoes.
Ok, technically I am talking about yams. The orange veggies that we often call sweet potatoes. My favorite varieties are the jewels and the garnets. Whatever you want to call them, I’m in love.
Sweet potatoes are some of my favorite foods. I consider them an amazing SUPERFOOD because they are loaded with nutrient-dense goodness. Yams contain approximately 30% of your daily vitamin C requirements. Yams are also rich in Vitamin B-complex, especially B6. B vitamins are essential for your body to regulate stress and mood, along with many other metabolic functions. Because of the fiber and carbohydrate content of yams, they are an excellent source of long-lasting energy. And don’t forget about Vitamin A, Potassium, Iron, Calcium, Manganese, and Copper.
