When it came to coconut flour, it was NOT love at first site. I had no idea how to use it. And I had no idea that coconut flour was a breed of it’s own when it comes to gluten and grain free baking. Am I the only one who has ever tried to use coconut flour and ended up with a dense, dry mess?
But those days are over. It has taken some trial and error, but I am now a big fan. Coconut flour is a great alternative for folks who are avoiding gluten and grains. I really LOVE almond flour, but too much of a good things is never good. Plus many folks are avoiding nuts as well. So, I have been creating a relationship with coconut flour, and I am now happy to say that we are friends.

I have found I can adapt many recipes for cakes and such using 50 – 50 King Artur flour and coconut flour by adding to the eggs and liquids in the recipe.
Yes- once you get the hang of it, it becomes easier. Lots of eggs is usually the answer!
Any suggestions for those of us who can’t have eggs? Most of these have egg in them and would like to find a good substitute to use for baking.
I totally get it. My sweetie is off eggs for 60 days and I have been at a loss as far as baking goes. Grain free baking without eggs is tricky. I have been experimenting with flax eggs, but no real success yet. I am going to keep working on it. 🙂
Try kicking up the amount of oils, and add extra baking powder (or a bit of vinegar and Cream of Tartar ) to help balance out the oils and help with rising. You’ll need to experiment. For cakes, I generally go for the roasted hazelnut oil, but for other foods that need a fairly tasteless oil, I like grapeseed oil, Different oils need differing amounts of leavening agent to balance them out, so like I said, you’ll need to experiment.
