It’s summer.  It’s hot.  And the last thing I want to do is turn on my oven.  Are you feeling the same way? Here’s 45 easy to make no cook recipes that you can whip up in a flash without turning a knob. 

Don’t get me wrong, I do love to cook.  But the thought of heating up my kitchen on an already hot day does not sound fun.  So take a vacation from cooking and check out these healthy no cook recipes from around the web. They can be thrown together easily on those busy summer days and will be your saving grace on lazy weekends. They are all gluten and grain free.  And many are dairy free as well.

Keeping your kitchen stocked with a few basics will make creating no cook recipes a breeze this summer.  Here’s what I like to keep in  my kitchen:

  • rotisserie chicken
  • homemade mayonnaise (get recipe HERE)
  • canned salmon
  • fresh salad greens
  • fresh vegetables for salad
  • romaine or butter lettuce for lettuce cups
  • lemon and vinegars for dressings
  • fresh herbs for garnishing

🥬 basically just cabbage, beef, onions, and rice • all baked together in a good quality broth until crispy and golden on top • YUM 

🥬 cabbage casserole is to Finns 🇫🇮 like spaghetti is to Italians, tamales to Mexicans, and curry is to Eastern Indians • it is almost as old as Finland itself and is an essential part of the Finnish culinary tradition
