There is one week during the summer when all of the peaches on our beloved peach tree are ripe. There is nothing like biting into fresh, homegrown peach letting the juices run down your chin. One of favorite things to do with our peaces is to make soft serve peach ice cream. No ice cream maker required. Dairy free. Only 2 ingredients. You are going to love it!
Like the list of ingredients in this recipe, this is going to be a short and sweet post. The only way being a parent works for me is if I put my family first. If my kids (and sweetheart) are happy and taken care of, my life runs smoothly. I started Savory Lotus as a way to be able to be home more and to be around my kids as much as possible. But sometimes I don’t have as much time to spend on creating recipes and writing posts as I would like. I have learned that it’s best to just go with the flow of my family. It feels right to always put them first.
Summer time means lots of outdoor fun and kid time. So I’m just popping by for a second to share this effortless and delicious peach ice cream recipe with you. It’s ridiculously easy to make. All you need is a food processor (or high speed blender) and 2 simple ingredients. It’s creamy. It’s naturally sweet. And it’s the perfect summertime snack on a hot day.

Print2 Ingredient Peach Soft Serve (dairy free)
- Yield: 2 1x
Ingredients
- 2 cups frozen peach slices
- 1/4 cup full fat coconut milk (you may need a titch more) (where to buy BPA and additive free coconut milk)
Instructions
- Process peaches in a food processor (like this) until you get a creamy texture.
- Scrape down the sides, add coconut milk, and process again until creamy smooth.
- Eat. Enjoy. Be happy.

Yes, you can use any milk that you like. Each milk will have it’s own unique flavor and level of creaminess.

Have you tried blending unfrozen peaches with coconut milk and then freezing the mixture?
Or just doing it like you did here, but then instead of eating it right away, put it in freezer containers for later?

I prefer ths method as it is a nice consistency. Freezing for later can make it a bit hard for my taste. 🙂
